Modifying or deleting a tag is accomplished through the "long tap" gesture. Tap and hold the tag you wish to modify or delete for about 1-2 seconds. The tag will be loaded back into the input field allowing you to change the tag and save it. Next to the save button you will also find a delete button for removing the tag from the list.
